The Coffee is grown in the southwestern corner of one of the Rolando shows Arabica plantssouthern most states in Mexico, the state of Chiapas.   Look at our Salvador Urbina page to see a map and learn a little more about Chiapas.


The coffee is cultivated at altitudes between 4,000 and 5,000 feet above sea level; on the side The Volcano Tacana'of a 13,333 foot, (4030 meter) high volcano named Tacaná.  The top of Tacaná is actually in Guatemala.  Thankfully ol' Tacaná quit smoking back in 1986!

Just Coffee is made from 100% Arabica beans that are organically grown, with no chemical fertilizers or pesticides.  The coffee trees grow underneath shade trees. Shade-grown coffee is among the best tasting and environmentally beneficial coffees.

Ideal conditions for a coffee tree include high humidity, shade, temperatures from 65 to 80 degrees F and plentiful precipitation.  The annual rainfall in Salvador Urbina is between 12 and 14 feet.
The combination of the Tacaná volcanic soil, high altitude, abundant rain, organic techniques and shade tree method of raising this Arabica coffee provides for an excellent tasting, aromatic, memorable cup of coffee.

Robusta is the other type of coffee plant.
As the name implies, these plants are more robust with respect to demise through disease.  Robusta plants generally yield almost twice as many beans as Arabica plants.  Generally the caffeine content is much higher and the taste is not as delicate and aromatic as Arabica.
If the coffee that you are drinking does not say Arabica, it isn't.
Does your morning cup of coffee ever taste a little like roasted rubber? This is often a description of coffee from some Robusta type beans.

Each cherry from a coffee tree holds two coffee beans or seeds.  Coffee trees require five to six years of hand pruning and attention before they begin to bear fruit.  The weeds around the base are regularly hand pulled and combined with the prunage(!) to make an organic fertilizer.
When the time comes and the cherries ripen to a bright red, they are hand picked up to 5 times in a single season, (because the cherries do not all ripen at the same time). 
Each tree yields nearly one (1) pound of ground toasted coffee.
